Look at the composition of the store sweets, I'm sure you will count more than 20 obscure names. I will only use 3 + filler at will. Only 3 ingredients! Can you imagine?

When I wondered how to make chocolate at home, I realized that almost all chocolate recipes are a mixture of cocoa powder with butter, and this is completely wrong, because real chocolate is not made from cake powder, but from real cocoa beans and butter cocoa, and these are its indispensable ingredients. Therefore, I turned for advice to a vegan friend, who helped me with the proportions 🙂 So, if you still do not know what to give the girl or guy on February 14, we begin to prepare gifts from sweets.

So, a step-by-step photo recipe for chocolates, or how to make sweets at home.


  • cocoa - grated beans (raw cocoa) - 50-100 gr
  • cocoa butter - 50 gr
  • honey - maple syrup or other sweeteners - to taste
  • cream - or milk (can be dried) coconut or regular - to taste and optional
  • nuts - dried fruits, seeds, berries - optional

Cooking method

How to make chocolate at home? Yes, very easy! All you need is quality ingredients and silicone molds for sweets. The given amount of ingredients is enough for about 20 pieces. We start cooking, although it is more like meditation 🙂 By the way, you probably already realized that it is not necessary to use a form for sweets, you can also make a bar of chocolate 😉

Making chocolate begins with the preparation of all the ingredients. In each candy I will put cashew nuts or forest nuts and some raisins. Only I love him in our family, so there will be few of them 🙂 We chop raw cocoa and cocoa butter into pieces, so they will melt faster.

Prepare a water bath. If you do not know how to make a water bath, then look at the photo below. We take a pan, pour a liter of water into it, bring to a boil, reduce the heat to a minimum, and put a large bowl or pan or pan on top, the main thing is that it is heat-resistant, otherwise it will burst like mine.

Now put the grated cocoa beans and cocoa butter in a bowl in a water bath, stir with a silicone spatula until completely dissolved and turn off the heat. Handmade chocolate is almost ready 🙂

Add any sweetener. 1 teaspoon, stir until dissolved, then taste. If necessary, put more. Also, if you wish, at this moment you can add regular or coconut cream / milk, then you will make regular milk or vegan milk chocolate.

By the way, if you are preparing regular milk chocolate, then to enhance the creamy taste, you can also add butter or ghee, which also hardens well. [Addition: I didn’t have any problems adding ghee and liquid coconut cream, but one of my friends had chocolate chips for unknown reasons, so it’s possible to use milk powder to completely eliminate the possibility of delamination!] And another important point! The more milk, the more cocoa butter should be in relation to beans, otherwise homemade chocolates may not freeze. Therefore, the number of beans I have and varies from 50 to 100 grams.

Here’s the recipe for hot chocolate! However, the chocolate candy recipe has not yet come to an end. We take a silicone mold or pour hot chocolate into the recesses. I did it with a teaspoon, it’s more convenient.

It is important to consider that if you want to add stuffing to delicious chocolate candies, you do not need to top up to the brim, otherwise then cocoa chocolate will flow over the sides.

We spread the fillers. You can drown nuts or dried fruits in chocolate, but I prefer it when the filling is visible. Small but tasty gifts for lovers are almost ready!

And if you don’t have enough tins, you can pour the remaining real chocolate into muffin tins, for example. We put delicious chocolates in the refrigerator for about 1 hour.

We take it out of the refrigerator and carefully remove the natural chocolate from the molds. Now you know how to make chocolates at home! 🙂 On my points are visible - this is honey. Ingredients needed for cooking:

  • 250 grams of cocoa powder,
  • 150 grams of butter,
  • 150 ml of water
  • 100 mo of milk,
  • 30 grams of flour
  • 120 grams of granulated sugar.

Water is poured into a pan and heated, but not brought to a boil. At this time, the butter must be melted in a microwave or in a water bath and mix it with cocoa powder until a homogeneous consistency. A mixture of butter and cocoa, milk, flour and sugar is added to the heated water. All this is thoroughly mixed, avoiding the formation of lumps.

In the prepared container, on the bottom of which the food foil spreads, the chocolate mixture is poured, which must be evenly distributed over the entire area of ​​the container. After that, the dishes with chocolate mass are cleaned in the freezer for 2 hours before solidification. The frozen treat is cut into pieces and ready to eat!

Chocolate surprise candies

Such a chocolate treat is very often found in gift boxes! We are used to buying such sweets for ourselves and our family, as well as giving them as a gift. However, this sweetness can be made at home on your own by investing in them a piece of your soul and presenting it to a loved one as a gift. Such hand-made sweets will be appreciated by everyone!

Ingredients needed for cooking:

  • 200 grams of dark chocolate,
  • 150 grams of almonds,
  • 100 grams of dates
  • 50 grams of white chocolate.

First of all, it is necessary to melt the dark and white chocolate in a water bath in different containers. While chocolate is being heated, there is time to remove the seeds from the dates, and instead put 1-2 nuts there. After that, white chocolate is carefully applied to the place where the cut was made on the date in order to hold the filling together. After that, dates with white chocolate must be removed for 2 hours in the freezer.

After the time has passed, the dates in white chocolate are removed from the refrigerator and they must be completely soaked in melted dark chocolate one by one and put on food foil. After everything is done, the candies are again put into the freezer for 3-4 hours until the chocolate completely hardens.
Ready candies, on top you can decorate with white chocolate and coconut. Such a delicacy will not leave anyone indifferent!

"Bird's milk"

Candy "Bird's milk" is familiar to all of us since childhood, however, few people tried to cook them at home on their own. And in vain! Making them is very simple, any novice cook can cope.

Ingredients needed for cooking,

  • 200 grams of chocolate
  • 3 egg whites,
  • 3 grams of citric acid
  • 200 grams of granulated sugar
  • 30 grams of gelatin
  • 150 grams of condensed milk,
  • 150 grams of butter.

First of all, gelatin must be filled with cold water and left for 25 minutes, so that it swells. At this time, the proteins are whipped with a mixer, while citric acid must be added to them gradually.

Melt the butter in a water bath and mix it with condensed milk. We return to gelatin. Sugar and gelatin are added to the container with the solidified mass, the mixture is heated in a water bath.

"You should not bring the gelatin to a boil, otherwise it will not thicken, which can ruin the process of making sweets."

After heating the mass, it must be mixed with whipped proteins, melted butter and condensed milk until a homogeneous consistency is obtained. In the prepared form, in which it is planned to make sweets, the resulting mass is laid out, and then it is removed into the freezer for 2 hours before solidification.

At this time, it is necessary to melt the chocolate in a water bath and cool it. After 2 hours, the resulting souffle is dipped in melted chocolate and laid out on the foil, after which the bird's milk is again removed in the refrigerator so that the chocolate freezes.
At the final stage, you can decorate bird's milk with whipped cream or do without it. Homemade “Bird's milk” candies are much tastier than those sold in stores. Pamper your loved ones with such sweets once, and they will ask them to cook very often!

Truffle making

Truffles are an exquisite delicacy loved by many gourmets. However, these candies have one drawback - they are quite expensive compared to other candies. Here the recipe for how to make truffles at home comes to the rescue! Homemade truffles will turn out to be very tasty and more economical compared to their counterparts from the store shelves.

Ingredients needed for cooking:

  • 200 grams of bitter chocolate
  • 65 mo fat cream,
  • 40 grams of powdered sugar
  • 30 ml cognac
  • 25 grams of chopped nuts
  • 80 grams of cocoa powder.

Melt chocolate in a water bath. At this time, the cream is mixed with powdered sugar, heated, but not brought to a boil, and the mass is mixed. After that, the resulting mass is added to the melted chocolate and everything should be mixed again.

Then cognac and nuts are added to the same container, the mixture is thoroughly mixed again. After that, the mass is cleaned in the refrigerator for 90 minutes. After an hour and a half, it is removed from the refrigerator, the consistency should be like that of plasticine.

Cocoa powder is poured into the plate, and the hands are moistened with water, and the process of forming truffles begins - sculpt them in either round or triangular shapes. After the truffle is formed, it is dipped in cocoa powder.

The resulting truffles are cleaned in the refrigerator for 60 minutes, and after time they are ready to eat!

Toffee sweets

Anyone who has tried these sweets at least once will never be indifferent to them! A stunning combination of toffee, nuts and chocolate makes these sweets extremely tasty! The delicacy “Toffee” is loved by both children and adults. Try to make Toffee yourself at home, we assure you, absolutely everyone will like them!
Ingredients needed for cooking:

  • 200 grams of tiled creamy iris,
  • 40 grams of hazelnuts,
  • 40 grams of dark chocolate
  • 60 ml cream
  • 25 grams of butter,
  • A little sunflower oil.

Creamy iris is ground and melted in a water bath. To make sweets, 10 grams of butter, 30 ml of cream are also added to this mass and everything is thoroughly mixed until a homogeneous consistency is obtained. Hazelnuts are peeled and slightly fried. The form for sweets is smeared with sunflower oil and melted iris is distributed in its cells. In each cell, you need to put 1 nut so that it is in the center of the iris mass.

After that, the form is sent to the refrigerator for 20 minutes. At this time, the chocolate is melted in a water bath, and then the remaining cream and butter are added to it.

After 20 minutes, the candy form is removed from the refrigerator and the chocolate mass is carefully laid out on top of each candy. When everything is done, the form with sweets is removed for 5 hours in the refrigerator. After the lapse of time, Toffee sweets are ready, you can treat them to yourself and your household!

“Chocolate roasted”

Chocolate roasted sweets are very popular sweets. This oriental sweetness is also very easy to make at home on your own. There is nothing complicated in the recipe for cooking, everyone will cope!
Ingredients needed for cooking:

  • 500 grams of walnuts,
  • 150 grams of granulated sugar
  • 70 ml of water
  • 30 ml of lemon juice
  • 200 grams of dark chocolate,
  • 50 ml of brandy.

First of all, it is necessary to chop a walnut. Then water is poured into the pan and sugar is poured out, this mixture is put to heat on a slow fire and cooked to a state of thick consistency and a golden color. After the syrup is ready, lemon juice and chopped walnut are added to it and everything is thoroughly mixed. It's time to start forming sweets! To do this, you need to take a small amount of mass and give the sweets a round or oblong shape. The finished grill is left in the refrigerator for 30 minutes. At this time, dark chocolate must be melted in a water bath, and then add cognac to it and mix thoroughly.

After the chocolate icing is ready, the roasting is removed and the refrigerator and each candy must be wet in the chocolate mass. Ready candies are laid out on food foil and sent to the freezer for 2 hours before solidification. After the lapse of time, the "roasted chocolate" chocolates are ready to eat!

In the process of creating cooking recipes, any heated mass should never be brought to a boil, so it is necessary to monitor the heating process and remove the container in which chocolate, milk or something else is heated before the product begins to boil.

In order to make sweets, it is necessary to use only fresh products of good quality.

Choosing Chocolate for Sweets

For the manufacture of handmade chocolates, any chocolate without additives and fillings is suitable: black, milk, white. But do not use porous tiles. Callets are ideal - tempered chocolate in the form of small discs. An important point is tempering (read more about it in this article). This is a process of gradual heating and cooling, in which stable crystals are created. They allow molten chocolate to solidify again, give it shine and gloss, and prevent the formation of gray plaque.

Dessert can be filled with dried fruits and nuts, nougat and ganache, jam and fresh fruit and berries. At home, it is not so difficult to prepare the last filler. For ganache, you will need cream, chocolate, butter, flavor and some alcohol. In a steam bath, melt the chocolate with cream, then the rest of the ingredients are added to the dissolved mixture, everything is thoroughly mixed and put into the refrigerator for a couple of hours. The cooled cream can already be used to make desserts.

How to keep a homemade treat

Candy is best stored in the refrigerator. The shelf life depends on which filling was used. Dessert with dried fruits can lie in the refrigerator for up to one month, and if there are nuts, then much longer. If the filler was fresh berries or fruits - a couple of days. With a ganache filling, everything is simple: what is the shelf life of cream, such is the shelf life of dessert. And the chocolate itself is stored for up to 12 months, it all depends on the type of tile.

Homemade Liquid Chocolate Candy Recipes

The essence of all methods of making homemade sweets is that we can come up with any filling you like, and then pour it with chocolate. It all depends on your preferences and ability to combine products. Now we will give the most popular, delicious, unusual combinations and recipes for handmade sweets.

Sweets with jam

What we need:

  • fruit / berry jam - 150 gr,
  • dark chocolate - 150 gr

How to do it

  1. Cut into small pieces a chocolate bar.
  2. Temper chocolate. To do this, in a water bath we heat part of the chocolate chips to 45 ° C. Then lower the temperature of the mass using the remaining chips to 26-27 ° C.
  3. We mix everything thoroughly until all the pieces are completely dissolved, you can put a bowl with a hot mass over cold water, so it gradually reaches 27 ° C.
  4. At this stage, we again heat the chocolate in a water bath to 32 ° C, in no case should the temperature be higher, otherwise all the crystals we need will collapse and the process will have to be repeated again.
  5. The desired temperature is reached - we check the quality of tempering. We’ll drop a little mass on the parchment, if it has hardened for 5 minutes and glistens, then everything is done correctly, we work further.
  6. Pour the tempered mass into molds for future sweets. Since our filling is liquid, it is important to distribute the chocolate throughout the volume of the mold so that it does not leak out later. To do this, as soon as the chocolate mass has been poured into the container, turn the tin on a glass board or simply on a table so that the chocolate spread around the edges. The excess must then be removed.
  7. After 5 minutes, when the mass has frozen, put the jam in our molds with chocolate.
  8. The remaining chocolate is tempered again (the same chocolate can be tempered up to 5 times), then pour it over the jam.
  9. We wait 5-10 minutes (for reliability, you can put it in the refrigerator, although temperamental chocolate does not require this) and get it out of the forms - the delicacy is ready.

The principle of making all homemade sweets with liquid filling is similar to the one we described above. For the filling, you can use fresh grated berries with sugar, various jams. A great combination is jam and ganache.

Sweets with dried fruits and nuts

What we need:

  • black chocolate - 100 g,
  • dried figs - 100 g,
  • dried dates - 100 g,
  • sesame seeds - 30 g,
  • cashews - 100 gr
  • honey - 2 tablespoons.

How to do it

  1. Wash and chop dried fruits and nuts in a blender.
  2. Sesame seeds are fried in a pan until golden brown.
  3. In one bowl we mix sesame seeds, dried fruits, nuts and honey.
  4. Small balls are made of the resulting mass. You need to stick a toothpick into each candy, so that later it is easier to dip them in chocolate.
  5. Put the sweets in the refrigerator for 15 minutes.
  6. While the sweets harden, we temper the chocolate with a steam bath.
  7. We take the balls from the refrigerator and pour them with melted chocolate.
  8. We spread round sweets on parchment paper and again we hide in the refrigerator until the chocolate glaze completely hardens.
  9. We take out toothpicks from the frozen candies.

Homemade Truffles Recipe

What we need:

  • dark chocolate - 200 g,
  • fat cream - 70 ml,
  • icing sugar - 50 g,
  • cognac - 30 ml,
  • nuts - 30 gr
  • cocoa powder - 70 gr.

How to do it

  1. Finely chop the nuts in a blender.
  2. Put the melted chocolate in a water bath, pre-chop the tile.
  3. While the chocolate is melting, mix the cream and powdered sugar in one container. Mix well and put on fire, heat, but do not bring to a boil.
  4. In one container, mix the chocolate mass and cream with sugar.
  5. Add nuts and alcohol to the same mixture. Stir everything thoroughly, after which you need to cool the mass in the refrigerator for an hour and a half. After this time it cools down, the consistency should resemble plasticine.
  6. Now we sculpt our sweets. For convenience, wet your hands with water. From the mass we form circles or triangles, then sprinkle the figures with cocoa powder.
  7. After we remove the candies in the refrigerator for one hour. At the end of this period, the sweets are ready.

Strawberry Truffles with Yogurt and White Chocolate

What we need:

  • white chocolate - 120 g,
  • yogurt - 60 gr
  • strawberries - 500 gr
  • coconut flakes - 150 gr.

How to do it

  1. We grind and melt the chocolate bar either in a water bath or in a microwave.
  2. Pour yogurt into the chocolate mass, mix well and set to cool in the refrigerator.
  3. At this time, you need to wash and dry the strawberries.
  4. When the yogurt-chocolate mixture has cooled and hardened, we proceed to the formation of truffles. We take our mass and envelop it with the berry, then sprinkle the candy with coconut. Repeat the same with the remaining strawberries.
  5. We remove the balls in the refrigerator, wait for the hardening, and then serve it on the table.

Bounty Bar Recipe

What we need:

  • coconut flakes - 200 gr,
  • cream (fat content - 20%) - 200 g,
  • butter - 40 gr,
  • granulated sugar - 100 g,
  • milk chocolate - 300 g,

How to do it

  1. In a saucepan, mix the cream with butter and sugar. We put the container on a slow fire, constantly stir until the sugar is completely dissolved.
  2. Melted - remove from the stove. Pour coconut flakes to these liquid components, mix until a viscous, homogeneous mass is formed.
  3. Our mixture now needs to be transferred to a plastic container, evenly distributing a dense layer along the bottom, the height should be about 2 centimeters. Pre-tighten the bottom of the container with cling film. When the coconut mass is tamped, wrap the container again with a film. Then we put it in the refrigerator for an hour.
  4. We take out the container from the refrigerator. Gently take out the coconut layer. Now we need to cut the layer into identical pieces with a length of 6 cm and a width of 2 cm. To give an aesthetic shape, you can round the edges. We lay out the unprepared sweets on parchment paper and again hide in the refrigerator for an hour.
  5. Temper the chocolate and cover it with coconut plates.
  6. We get the hardened bars from the refrigerator. Alternately lower each into the icing.
  7. When all the coconut sticks are “bathed”, we put them again on the parchment and send them in the refrigerator until the chocolate layer completely hardens.
  8. The finished dessert is then stored only in the refrigerator.

Recipe "Prunes in Chocolate"

What we need:

  • pitted prunes - 250 gr,
  • dark chocolate - 150 gr.

How to do it

  1. Wash the prunes, and then pour boiling water over it for 20 minutes.
  2. After dried fruit you need to dry well.
  3. Temper the chocolate bar.
  4. We take a fork or a large skewer, prune it and drop it into the chocolate mass. If the chocolate is unevenly layered or the layer is too thin, repeat the procedure again.
  5. After “bathing”, lay out the dried fruits in chocolate on parchment paper and put them in the refrigerator for solidification.
  6. The chocolate is frozen - the dessert is ready.

Chocolate candy with fondant

What we need:

  • any chocolate - 300 gr,
  • condensed milk - 380 g,
  • butter - 60 gr,
  • nuts to your wish.

How to do it

  1. In a stewpan, heat the condensed milk.
  2. Butter is added to the condensed milk.
  3. We crumble our chocolate, mix thoroughly until a homogeneous mass is formed.
  4. After that, add the nuts, if they are in your recipe.
  5. We distribute the resulting mass on the molds for sweets.
  6. We put the forms in the refrigerator and wait for the complete hardening.

An obvious plus is the speed of cooking. The advantage of this recipe is that chocolate does not need to be tempered, and the candy still hardens thanks to the use of butter.
